A really straightforward, minimal resources needed, hours of fun game to help improve hand eye coordination.

Just tape pieces of paper to the floor making an arch and see if your child can get the ball through the tunnel. You can make it harder by making the arches smaller or adding more in a row. Add numbers to test their numeral recognition by seeing if they can roll the ball through the correct tunnel.

Older children could give each arch a certain amount of points depending on difficultly or starting point for the roll. They can then add up the scores as you play.
